嗆蟹是江浙及上海著名本幫菜之一。

歷史

江浙地區多產河塘,陽澄湖大閘蟹,太湖蟹都富盛名,但是淡水蟹都先煮熟再嗆,尚有紹興酒;二者結合,即是饕客垂涎的珍味。
