萎凋是製造酵茶的一個過程,將摘下的茶葉先放在日光下(稱作室外萎凋)之後再移置室內(稱為室內萎凋)使其水分減少而枯萎、葉片變柔軟,亦有用熱風吹拂來加速乾燥的。水分減少之後,茶葉中的細胞成分才會與空氣中的作用,即發酵
