辣椒醬

辣椒酱泛指各种以辣椒制成的醬料,通常是以辛辣为主的辣酱,经常配以其他等味道,也有一些偏重其它味道,如偏甜的甜辣酱[1]

制作

辣椒酱通常以切片、切碎或捣碎的辣椒配上等调味料调制而成[2],其它常见的搭配香料有大蒜葱头酱油香菇等等。

有的辣椒酱实际上会以其它东西为主要材料,例如以番茄酱为基底的甜辣酱[3]、以峇拉煎为基础的参巴酱等。
